Built Here: Restaurant Kinsley — Where Kingston's Fine Dining Scene Finds Its Center |
In a restored 19th-century bank building at Wall and John Streets, Restaurant Kinsley has spent years earning a reputation that most Hudson Valley restaurants only dream about |
Restaurant Kinsley isn't trying to be a New York City import. What it does is something harder — serve beautifully composed, seasonally driven New American cuisine with Southern and French influences in a space that feels warm, unhurried, and genuinely welcoming.
The Menu Tells Kingston's Story
Executive Chef Spencer Coplan directs a kitchen built around the Hudson Valley's agricultural bounty. The menu shifts with the seasons, which means a visit in October will feel different from a visit in April. Signature dishes like the Pork & Peaches ($36), Steak & Onions ($50), and Shrimp & Marsh Hen Hill Grits ($27) showcase ingredients sourced from farms within driving distance — Ulster County, the Catskills, and the Hudson Valley's best producers.
Brunch lovers flock to the Chicken & Waffles ($24) and Nashville Hot Chicken Sandwich ($22). The Happiest Hour (Monday-Thursday, 4-6pm) offers $14 cocktails, $8 beer and cider, and 10% off apps and sides — a rare deal for this caliber of dining.
A Space That Works
The restaurant occupies a historic bank building, and the interior strikes a balance between elegance and comfort. Exposed brick, warm lighting, tables spaced so you can actually hear your conversation. It's the kind of room that makes you slow down — which is exactly what good dining should do.

50 bucks for steak and onions is a lot for around here. I get that they source locally and the space is nice but that price point is hard to justify for a regular Tuesday night out. The happy hour deal sounds decent though, might try that first before committing to a full dinner.
mike_upstateTotally fair point on the steak price. Honestly the happy hour is a smart way to get a feel for the kitchen without dropping a ton of money. I did that a few months back and ended up going back for a full dinner because the food was just really good. But yeah, not a casual Tuesday spot for most of us.
Went here last month for my birthday and the Pork and Peaches was honestly one of the best things I have eaten in Kingston in years. The room inside that old bank building is gorgeous too, way cozier than I expected. Definitely worth it.
